- In a mixing bowl beat butter and sugar until it turns light and fluffy.
- Add in tsp of orange essence or zest and curd. Give it all few good mix.
- Squeeze out cup of fresh orange juice and keep aside to use later.
- In butter and curd butter sieve in all-purpose flour, baking powder and baking soda. Mix all them well.
- Add little by little orange juice and start folding all the ingredients together. You will need around a cup or little more juice for making perfect consistence of cake batter. Further add in orange food colour, however it is completely optional.
- Transfer batter to mold of your choice lined with butter paper or dusted with flour. Bake it for 30 to 35 minutes in oven or over low to medium flame in kadhai or cooker with a stand.
- Chill a mixing bowl in deep freeze and add to it whipping cream. Add in 1/2 tsp of orange essence and beat the cream until light and fluffy.
- Now transfer cream to a piping bag. To decorate the cake. Cut the cake into slices and top each slice with cream and like wise cover whole cake with cream.
- Decorating cake with star nozzle, orange slices and mint leaves.
