- Preheat the oven to 180 degrees celsius and prepare the cake tin
- In a mixing bowl add water and jaggery and give it a mix until Jaggery completely dissolve
- Add half teaspoon of instant coffee powder,oil,vinegar and Vanilla extract to the Jaggery mixture and mix well.the oil and water has to be completely mixed.
- Add whole wheat flour,cocoa powder,baking soda and pinch of salt to a sieve and sieve it to a mixing bowl bowl
- At the wet ingredients to the dry mixture in small proportion at a time.
- Mix the batter slowly and make sure no lumps in the cake batter.the cake batter has to be thin and not thick
- Pour the batter to the prepared cake tin and bake in the oven for 25 to 30 minutes at 180 degrees celsius
- Once the cake is done transfer it to a wire Rack and let it completely cool.apply sugar syrup over the cake to make it moist
- Notes:1) whole wheat flour can be replaced with all purpose flour in that case the amount water required may be little less 2) you can use sugar instead of jaggery 3) the batter has be thin so adjust the quantity of water accordingly4) vinegar can be replaced with lemon juice. 5) for best result use good quality cocoa powder and baking soda
