- Preheat oven to 350°F
- In a large bowl, whisk together the flour, baking powder, salt, baking soda, and cinnamon. Set aside.
- In another bowl, beat the butter on medium speed until smooth. Then add the sugar and brown sugar, and beat another 2 minutes.
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla.
- Mix in 1/3 of the flour mixture until it’s incorporated in the dough. Then the second 1/3, and finally the last 1/3 of the flour mixture. Beat until all is combined.
- Add the chocolate chips, pecans, oats, and coconut and stir until fully incorporated.
- Line 2 baking sheets with parchment paper and drop dough by rounded tablespoon, making sure to allow plenty of room between cookies.
- Bake for 10-12 minutes or until edges of the cookies are set and golden brown. Let the cookies cool for 1-2 minutes on the pan before placing on a cooling rack
- I use my KitchenAid stand mixer with the paddle attachment, but because there is so much of the dough, I alway stir in the oats, chocolate, coconut and pecans by hand. This recipe makes A LOT of cookies. I typically freeze half the dough in a ziplock bag to use another time. - - Enjoy!!!
