The ingredients needed to make Mango Cake:
- Take 1 cup Sooji (Rava)
- Take 1 big Mango cut into small cubes
- Prepare 1/2 cup sugar
- Get 1/4 cup oil
- Take 4-5 tbsp milk
- Get 1 tsp baking powder
- Take 1/2 tsp baking soda
- Make ready 1/4 tsp Elaichi (cardamom)powder
Steps to make Mango Cake:
- In a mixie jar, add cut mango cubes and sugar to prepare a smooth pulp. Grind the Sooji to a fine powder.
- In a wide mixing bowl, add the prepared mango pulp and oil. Mix it well and then add the sooji. Mix it with whisker in one direction. Allow it to rest for 20 minutes.
- Meanwhile, in cooker add salt, place a stand and plate on it. Pre-heat it closing just the cooker lid without gasket and whistle for 10minutes at medium flame. Grease the cake mould with oil and dust maida over it.
- After 20 minutes the mixture will become thick and Sooji would have absorbed mango pulp and oil. Add baking powder, baking soda to the above prepared mixture. Add about 4 tbsp milk and mix well in one direction. Check the consistency of batter as shown in the pic. Don’t add too much milk. If batter is still thick add about 1 tbsp milk.
- Pour the batter in the greased cake mould. Place it carefully inside the cooker. Close the lid and bake it on low flame for 40 minutes.
- After 40 minutes check the cake by piercing a knife at the Centre of cake. If knife comes out clean then cake is baked. If not then bake it for another 5 minutes. Allow it to cool and then remove the cake from mould. Enjoy the delicious Mango Cake 🎂.
