  1. Preheat oven to 170C/325F. Line a 9x9" square tin with baking paper or I just use a silicone mould so you don’t need to line it.
  2. To make the cookie dough: soften the butter and beat with the sugars. Beat in the vanilla, whole egg and egg yolk until light and creamy. Mix in the flour, bicarb and chocolate chips. Spread over the bottom of the lined tin and throw on the marshmallows or whatever you decide to put in between the 2 layers.
  3. To make the brownie: Heat a saucepan of water and create a bain marie (put a glass bowl in the saucepan, but don’t let the water touch the bowl). Melt the butter and dark chocolate and set aside. Put the flour and sugar in a mixing bowl, pour in the chocolate and butter and mix until well combined. Crack in the 3 eggs and stir until smooth. Pour over the cookie base
