  1. For the cake :In a heat resistant microwave proof glassware addtogether water and chocolate chunks and microwave for a total of 2-3 minutes with 30 seconds interval each and stirring in between so that the chocolate does not burn…set aside
  2. Now In a large bowl whisk together oil,vanilla essence, condensed milk,Hung curd and the chocolate water mix we just preparate.Ensure the mix is homogeneous.
  3. Now in another bowl combine all the dry ingredients I.e flour, ground flax seeds,sugar,salt,baking soda and baking powder and mix it all together
  4. Now sift the dry ingredients through a sieve in 3-4 batches,so that no lumps are formed and gently combine all the ingredients so as to form a smooth liquidy mix(do not overmix).Adjust consistency by adding buttermilk.
  5. Divide the mix into two separate 8 inch cake tins that are grease and lined with butter paper/ parchment paper.
  6. Now place the tins in a preheated oven (170°C) for 35-40 minutes (till the inserted skewer comes out clean) at 180°C
  7. Till the cake is being baked,we will prepare the ganache and icing.For the ganche mix in chocolate and milk cream in a heat resistant microwave proof glassware and pop it in microwave for 2- 3 minutes till the milk just bes to boil (not actual boil)..stopping at 1/2 minute interval…keep it aside for a minute and thorough whisk it to form a homogeneous mix…once cooled pop it in the refrigerator.
  8. For the icing take the said amount of whipped cream in a pre chilled large bowl and whip it up using electric whipper at high speed for 10 -12 minutes (gradually adding the vanilla essence)till soft pecks are formed.
  9. Now divide the whipped cream into three parts more than half keep it white and divide the remaining half again into two parts of in major portion mix 2-3drops of blue colour to form light blue colour and to the remaining add 2-3 drops green to form light green.
  10. Apply cb coat with white whipped cream through out..and refrigerate for 30 -45 minutes
  11. Then apply the light blue colour on sea area and upper part of the cake…
  12. Next pour 1-2 drops of blue colour in the same light blue mix and apply the next layer below light blue layer and later pour few more blue drops in the same blue whipped cream and apply as a layer below the second layer.
  13. Now all the three colours with spatula and level up the cake.Now make a wave pattern with spatula.
  14. Similarly apply green colour whipped cream on mountains.
  15. Sprinkle Marie biscuits powder for the sand and sprinkle the biscuits powder mixed with green colour in the mountains for the extra effect.
