- Take 2 cups AP flour
- Make ready 2 tspn baking powder

- Pre heat oven, mine at 180deg, but I used charcoal jiko
- Mix flour and baking powder and sift
- Cream butter n sugar till light and fluffy
- Add an egg at a time while mixing
- Add in half the flour and start folding
- Add in the lemon rind and juice and mix a little
- Add the remaining flour and fold, but do not overmix
- In a greased pan,pour in the batter and then to the oven
- Bake for 30 min then check, if done remove from heat if not let it cook more
- Remove from heat, let it cool in pan for 10min then transfer the cake to a plate
