- Preheat oven at 350°
- In a large bowl, cream butter and sugar until light and fluffy
- Add eggs, one at a time, beating well after each addition. Beat in extract
- Combine the flour, baking powder and baking soda and sift together
- Add flour mixture to the creamed mixture alternately with coconut cream, beating well after each addition.
- In a food processor, cover and pulse pineapple until almost smooth and Stir into batter.
- Transfer batter into a baking yin lined with butter or baking paper. And bake it in the oven in 350° for 20-25 minutes
- After cake has cooled, cut into layers of choice and evenly add enough pineapple juice/ syrup to each layer
- Whip the whipping cream together with iving augar and vanilla. Add corn starch for stiff peaks.
- Add whiping cream one bottom layer and your coconut and pineapples, and put ontop a nothee layer of cake. Until your cake layers are done.
- Cover the whole cake with whipping cream (colour of choice) and cover cake with remaining coconut. Finally top the cake with pineapple pieces or any fruit of choice.
