- Heat oil in a nonstick pan. Splutter mustard seeds. Add the daals, cashews, jeera, green chilli, ger-garlic paste, chopped curry leaves, & asafoetida. Saute until golden brown. Turn off the flame. Add the seasoning to the idli batter and mix well until combined. Grease the idli molds with oil. Fill 3/4th of the molds with the prepared batter. Steam in a idli pot/steamer on medium flame for 15 minutes or until done.
- When inserting a tooth pick in the middle of the idli, if it comes out clean without batter sticking, it indicates it is cooked. Turn off the flame and remove the molds from steamer and alloq it to cool. Gently loosen the idli from mold using a knife and just tapping the mold by placing upside down.
