Instructions to make Lamingtons:
- Preheat oven to 180°C
- Place the eggs and sugar in an electric mixer and whisk on high speed for 10–12 minutes or until pale, thick and tripled in volume
- In the meanwhile, put the flour and baking powder in a bowl together and then sift three times to make sure they are mixed through and set aside. Also melt the butter
- Sift ½ of flour mixture over the egg mixture and gently fold through using a large metal spoon. Repeat with the remaining flour
- Add melted butter and fold through
- Pour the mixture into two shallow square tins lined with non-stick baking paper and bake for 16–18 minutes or until sponges are springy to the touch and come away from the sides of the tins.
- Remove from the tins and cool completely on wire racks
- Once cooled, spread blackcurrant jam on one sponge and place second on top. Then cut the sponges into roughly 6cm squares
- Make the icing by placing icing sugar, cocoa powder, water and (melted( butter in a large bowl and whisk to combine. And place the shredded coconut on a plate
- Using a fork, dip 1 lamington in the icing and roll in the shredded coconut. Place on a wire rack or tray to set
