- Get Mango puree
- Get Gelatin
- Take Heavy cream

- Take 50 g icing sugar(add to 100 if you have a sweet tooth)

- Make ready 1.5 Tbsp icing sugar
- Make ready 2 tbsp water
- Get 200 g Mango puree
- Make ready For Mango Glaze
- Prepare 100 g Mango puree
- Get 5 g Gelatin
- Take 1 Tbsp water
Steps to make Mango mousse cake:
- Cream butter and sugar. Add eggs one after the other as you beat. Followed by orange flavour. Add half the flour and little milk as you fold. Add the rest of the flour and fold until well combined. Pour in a lined tin and bake in a 180 degrees preheated oven for 30mins.
- When baked remove, cover with a cling film and set aside to cool completely
- Blend your mango and sieve to get rid of any lumbs.
- For the mousse. Put gelatin in water and let it bloom. Whip the heavy cream and icing sugar until soft peak and set aside.
- Put the gelatin in a warm bath until its clear and add to the mango puree. Mix it thoroughly. Now add the whip cream to mango puree and mix until well combined.
- Take your cooled cake and cut into a thin slice and put in a baking tin. I didn’t have the spring form, so i had to improvise 😊. I took a 6 inch cake board and placed in an 8inch cake tin. I put the cling film first, then the cake cakeboard. The cling film helped me pull the cake from the tin.
- Pour the mango mousse ontop. Place another slice of cake and add the mousse, spread evenly and refrigerate.
- For the Mango glaze. Sprinkle gelatin in water and let it bloom. Put it in a bath of hot water until its clear. Add to the mango puree and combine.
- Remove the mousse from the fridge and pour the mango glaze ontop
- Spread evenly and refrigerate. I added red cherries
- After afew hours, remove and garnish as you please.
- Cut and enjoy your dessert
