Instructions to make Malai milk cake:

  1. Boil 1ltr milk on medium flame bring it to boil and keep stirring so that it does nt stick to pan(use full cream milk)
  2. Aftr the first boil bring it to low flame and keep stirring the milk for approx 60_90mins til the milk hs reduced and has become thick
  3. Add lemon juice of 1lemon let it simmer for a mins and start stirring again till you strt seeing granules let the milk curdles add 1/2cup sugar stir it then again aftr 7mins put the anothr 1/2 till the sugar evaporates completely
  4. Then add 2tbsp of ghee and keep stirring till it bcms thick and strts chang to brown colour
  5. Add sum ghee to a tin and spread it and then pour the mixture and wrap the tin in a towel allowing the milk cake to settle down in warm plce fr approx 2hrs
  6. Place the tin on low flame 10sec allowing to smeard the ghee on tin to melt and loosen the milk cake so that it can easily realese it in to plate use a knife to loosen the edges
  7. Rabri: Add 1/2ltr milk to kadai boil on a low flame let the milk reduce add milk powder and stir it continously make sure ther are no lumps once you add milk pwde it will strt thickening fater in it add condensed milk,kesar strand and some almond powder,elaichi powder and wen it’s done switch of the gas
  8. Layer the thick rabri over the milk cake ganish with some pwdrd almond and chopped pistachio and almond
  9. Malai milk cake is ready to serve
