  24. Prepare 3 . Sugar - 3 tbspn
  25. Prepare 4 . Digestive biscuits - 12 crushed

Steps to make Toff - dates pudding:

  1. For making toffee, Put 1 tin sweet condensed milk [without opening can] in pressure cooker with enough water to cover the tin. Close the cooker and cook it for 1 whistle, then reduce the flame and cook for 30 - 40 minutes. Cool the condensed milk tin completely at room temperature before opening. Toffee ready.
  2. For dates cake layer : - -      * In a bowl add dates (without seeds) and water and microwave until it become soft. -      * Take it out, add baking soda and mix well. -      * Add butter and combine well. -      * Add sugar, all purpose flour and baking powder. Mix well. -      * Add egg yolk and combine well. -      * Pour this mix into baking tray or pudding tray. Place it into a 200°C preheated oven for 10 minutes.
  3. For caramel sauce : - -      * In a pan, add butter and sugar and caramelize it. -      * Add milk and fresh cream. Stir continuously and switch off the flame. -      * Add this sauce on top of baked dates cake. -      * Cool it and refrigerate it.
  4. For toffee layer : - -      * In a bowl, add whip cream and beat well. -      * Add icing sugar and beat again. Refrigerate this cream. -      * Take paneer, toffee and melted gelatin in a grinder and grind it well. -      * Mix this toffee mix into whipping cream mix and combine well. -      * Spread this mix on top of date sauce layer. Refrigerate it.
  5. For crunchy layer : - -      * Heat a pan, add butter and melt it. Add cashews and roast it. To this add sugar and crushed digestive biscuits and mix well until it turns golden brown in colour. -       * Switch off the flame and cool it. Sprinkle this on top of toffee layer. - Refrigerate it for about 2 - 3 hours. - Toff - Dates pudding is ready to be served.
