  1. For Malpua - In a bowl add flour, sooji, fennel powder, cardamom powder, powdered sugar, fresh cream and milk gradually and mix. Set aside for 15 mins
  2. For Malpua Syrup - In a pan add sugar and water and bring it to heat. Add saffron and mix until sugar dissolved. Set aside
  3. For Malpua frying - In a pan heat oil and add a ladle of the batter and fry 2-3 mins on each side. Set aside and add to syrup. Let it be in the syrup for 2-3 mins
  4. For Thandai Phirni Cake - soak Gobindobhog rice for 15 mins. Strain and add to the blender. Add 1/2 cup milk and blend fine.
  5. In a pan heat 4.5 cups milk and add the blended rice. On low flame keep stirring so that it doesn’t catch to the bottom.
  6. Add Thandai powder masala and pinch of nutmeg powder and keep stirring. Add sugar and cook for 2-3 mins more. Set aside
  7. Add the Phirni to the cake tin and refrigerate for 1 hour to set.
