- Take 1 left over full big ripe mango peeled/or 5 small ripe mangoes peeled
- Make ready 3 eggs
- Get 1 cup sugar

- Prepare 1 cup vanilla esscense
- Get 1 1/2 cup flour
- Prepare 1 tsp baking powder
- Get 1 tsp baking soda
Steps to make Mango Cake:
- Pre heat oven to 150 c
- Peel and cut mango into pieces and puree your mango. You can puree it with a food processor or manually with a stamper
- Cream the butter and sugar and add it to the mango puree with the eggs and vanilla esscense.
- Sift the flour, baking powder and baking soda. Create a well in the centre and add the mango mixture. Mix well
- Grease your baking tray. Pour in the batter
- Bake till golden brown or when skewer comes out clean
- Once cool sift top of cake with icing sugar and decorate with mango pieces (optional)
