Steps to make Crepe cake:
- First mix vinegar, vanilla extract in milk and set aside for 10 minutes
- Now to make crepes mix all dry ingredients in a large bowl
- Mix maida, coco powder, powder sugar and baking powder
- Assemble wet ingredients
- In a blender combine milk flax seed mixture
- Add dry ingredients gradually in wet ingredients and blend until smooth
- Add half cup of water, mix well
- Rest the batter for 15 minutes
- Now heat a 8 or 9 inch non stick pan over medium heat, when hot, lightly spray pan with butter or oil
- Pour 1/4 cup batter into pan, swirling the pan slightly to form a thin,even coating on bottom of the skillet
- Cook until the bottom of the crepe sets and in golden in colour for 1-2 minutes
- Gently flip with a spatula and cook the another side for 30 second
- Repeat with remaining batter, stacking finished crepes on plate
- From this batter you can make30- 40-crepes, depending on the thickness and diameter
- Cool crepes on rack
- Assemble ingredients for cream
- Mix all ingredients in large bowl whipped cream with blender until light and fluffy

- Place the first crepe layer on to your serving plate
- Stack crepes on top of each other with whipped cream between each layer
