- Soak berries,dates, raisins, apricots in 1cup and 1/4 cup of orange juice for 40 hours. Drain.
- In a bowl add oil and butter. Add sugar and mix well. Add egg one by one and mix well.
- In a bowl add flour,salt, baking powder and baking soda. Mix. Add in the liquid mixture in three times. Mix well. Add rest of orange juice. Mix. Add vanilla essence and mix.
- Add chopped cashew nuts, almond,1/3 of soaked dry fruits. Mix lightly.
- Grease cake tin with butter. Put butter paper. Pour batter into the tin. Tap. Decorate with cashew almond and rest of soaked fruits.
- Pre heat oven and bake in 180°© for 45 minutes. After 5 minutes. Take the cake out. After 15 minutes brush soaked fruits juice. Ready to serve.
